While Bok Choy normally avoids the media spotlight, its Brassica beauty stole the show during a recent photo shoot at Imperfect HQ. 

There’s nothing more fun than learning to love a new vegetable. Sometimes all we need to incorporate a new veggie into our kitchen rotation is some helpful context. So, if you’re not already cooking with bok choy, here’s what you need to know to fall in love with it:

What it is: bok choy is a leafy member of the cabbage family that is widely used in Chinese cuisine.

Why you should cook with it: It’s got a tender texture, mild flavor, and works well in soups and stir-fries. This makes it a wonderful team player in a wide range of dishes. It’s also super healthy!

Why it’s good for you: bok choy is packed with nutrients and is a great source of vitamins A, C, K, and calcium!

What ingredients go well with it: Soy sauce, mirin, ginger, shallots, green onions, and sesame oil.

Pro tip: Bok choy will take longer to cook than it’s aromatic friends like ginger and garlic, so we recommend either cooking the bok choy first, adding some liquid to the pan to help it steam, or gently heating it with the garlic and ginger to avoid burning them while it tenderizes.
